We don't identify level in that way, I'm afraid.  I'm sure you've made progress - well done - but we'd need to do some specific testing to ascertain your level, and that's not something we do at the moment.

"to be off sick" refers to when we don't work because we are sick. Tony is sick that day, and so he didn't come in to work.

Hi hayaalqasem,

When an infinitive is used after do, it normally indicates purpose - for example, "what are you doing to solve the problem?". In the case of "what's he doing working here?" in this episode, Harry isn't speaking about purpose, he's expressing surprise at seeing Carlos as an employee there, since he's normally seen him as a customer.

In the second sentence you ask about, "have to do" is a colloquial way of saying "be (good) enough". Harry means that Carlos would like his own restaurant, but that he doesn't have the resources to have his own restaurant now, so working in the cafe will have to be enough for him for now.
