I think I can understand "I write" to be "I write a passage" or "I write a sentence".

'Write' on its own simply means to make linguistic marks on a surface. It does not tell us what you are going to write, though this may be obvious in some contexts.

In this sentence "You ring the bell when you don't want to speak to someone any more" the adverb shouldn't be written "anymore" in one word?

There is a useful summary of the difference between 'any more' and 'anymore' here.

In your example 'any more' is used as an adverb meaning 'no longer' and it is possible to write it as two words or one. In British English it is more common to write it as two words; in American English writing it as one word is more common.
