This is explained in the entry for 'dead' in our dictionary, though it's not easy to find: you must scroll down past the phrases in green to the entry where the definition is 'complete(ly)'. Something 'dead easy' is 'very easy'.

The "big stuff" here refers to what Stephen gives examples of later in the sentence, that is, the very difficult magic needed to saw a person in half, etc.. "in no time" means very soon. To "be on to" something means that he will get or arrive to it.

So what he means is that very soon he will be able to do all of these difficult tricks.
