Of the words 'this', 'that', 'it' and 'which', 'that' and 'which' are relative pronouns. Please note that the the word 'that', however, has many different uses -- it is not always a relative pronoun.

Why she said " Have you got cold ones and didn't say " Do you have cold once ?

'Ones' here is a pronoun and is used to avoid repeating the noun. Compare these two versions:

OK, can I have the magazine and do you have a bottle of water?
Shopkeeper: Yes.
Gemma: Have you got cold bottles of water?

OK, can I have the magazine and do you have a bottle of water?
Shopkeeper: Yes.
Gemma: Have you got cold ones?

The first version repeats the noun phrase 'bottles of water'. The second uses 'ones' instead and this makes the style much better.
