This is an example of a fixed expression which does not change. Such expressions, which include some idioms, sayings, proverbs and more, grow up over time and are often ungrammatical - like this one. It is also fine to say 'How are things?' but it is less common.

what does "That should do it." exactly mean?

Imgine you are very hungry: then after you eat a good amonut of food you say: that should do it. ( enough)

that should do it . It should be ok. .

It means 'that should be enough' or 'that should solve the problem'. It's a fairly informal phrase.
