I think that "not really" is negation of low degree.
For example ,I 'm not really hungry now,so let's have dinner later.
While, "really not "is negation of high degree.
For example,I'm really not good at swimming,so  I don't want to take swimming lesson any more in the class.
Are these OK?

Yes it is. I mean one of the best ways to remember a word is to keep in mind some related vocabularies. For instance, actor, play, theatre, back stage crew all of them are used when you are explain the shakespheare.
Let me try. when you meet unexpected things, you can use amazing, beautiful, fantastic, perfect, and so on.
