I realize that I'm not in a position to alter Shakespeare's poetry , of course I'm not :) , but in other cases could I change 'are mere' with 'merely' in the line : The whole world is a stage and all men and women are mere players ?

The actual line is slightly different in the original:

All the world’s a stage,

And all the men and women merely players;

Remember that this is spoken poetry and the rhythm and cadence of the language is key. Purely in terms of meaning, it is possible to change 'merely' to 'mere' but the meaning is slightly different. 'Merely' is an adverb and tells us that being players is nothing special; 'mere' is an adjective and tells us that players are not important people. It is a very subtle difference, more of emphasis than meaning, but there is a slight difference.
