What kind of grammatical structure is the present perfect + infinitive as in "We’ve just been to see one of our favourite bands playing live"? When is normally used? Thanks!

The present perfect of 'be' can be used with the meaning of 'has/have come' or 'has/have gone', and that is what is meant in this sentence.

One important point is that 'has/have been' is only used in this way when the trip has been completed, i.e. in this example, saying 'we've been' means we've gone to see the band and now we've returned. Or if I say 'Jill's been to Paris' it implies that she is no longer there. If she is still in Paris, you must say 'She's gone to Paris', which implies she has gone there but has not yet returned.
