If you look up so much for in the Cambridge Dictionaries Online search box, you'll that it is used to express disappointment. In this case, Ash was looking forward to a nice sunny day at the beach - when it started to hail, she said this to express her disappointment with the bad weather. It is a kind of ironic statement.

in the video ash said, "we're looking after them for the day''.
Is it ok if i change the words "for the day" with just "for today"? Or do they have different meaning? I'll wait your reply, sir. Thank you

You're right: Ash could have said for today and it would have meant the same as for the day in this context.
There can, however, be a difference in meaning in other contexts: for the day can also refer to the past or future (not just the present, like for today). For example:
Last summer I stayed with some friends. One day when they had to work, I looked after their son for the day.
In this example, for today would not be correct, since it refers to the present rather than the past.
